Apple & Cream Cheese Bundt Cake

There is one thing that I absolutely cannot wait for once the fall season rolls around, and that is all the baking that starts this time of year. The mix of spices and seasonal fruit all baked into these delicious dishes are just so hard to resist! When I came across this Apple & Cream Cheese Bundt cake recipe from Southern Living, it just looked SO GOOD and I knew I had to give it a try. There are a few steps involved but the final product is worth it.

First off, the fact that this is a Bundt cake, sold me right away. I Love Bundt cakes. I’m not sure if it’s because they look cool or are just easier to cut?? Ha-ha! This cake is packed full of flavor and warm apples, it has a light layer of pastry style cream cheese filling that is not over sweet and is topped with a maple  icing and yummy pecans. This will be your new go to desert for fall. Make it for a thanksgiving feast or bring it to a friend’s get together and impress everyone there!

Instructions
  1. To prepare the filling: Beat together the cream cheese, butter and sugar with an electric mixer until smooth. Slowly add the egg, flour and vanilla. Beat until smooth. Set aside
  2. Preheat oven to 350 deg. In a shallow pan, bake your chopped pecans for about 8 minutes or until they are lightly golden brown. Stir halfway through. Set aside.
  3. To prepare the cake batter: In a large bowl, mix together flour, sugar, brown sugar, cinnamon, salt, baking soda, nutmeg, and allspice until combined. Add in eggs, oil, applesauce and vanilla extract. Once combined, stir in chopped apples and chopped pecans.
  4. Oil and flour the Bundt pan.
  5. Pour 2/3 of the cake batter into the pan. Spoon the cream cheese mixture on top of the cake mix. Be sure to leave space between the side of the pan and the cream cheese mixture. Using a knife, lightly swirl the filling into the cake batter. Top with the remaining 1/3 of the cake mixture.
  6. Bake uncovered at 350 degrees for 1 hour to 1 hour 15 minutes or until a knife comes out of the center clean.
  7. Cool on wire rake for 30 minutes then remove cake from pan. Cool completely.
  8. Prepare Glaze: On the stove-top, bring brown sugar, butter an milk to a boil over medium heat, whisking consistently. Allow to boil for 1 minute. Remove from heat and stir in vanilla extract. Slowly stir in powdered sugar and mix until smooth. IMMEDIATELY pour over cooled cake.
